Cold Brew Guide Part 1

Cold brew is fantastic. Here at Van Dyke we truly love everything about it, and we want to let you know how to brew it at home. We use a special method here at the shop called the Yama Cold Brew Tower. Due to the fact that the tower is quite expensive and a little impractical to use at home, we will be talking about two different methods for making cold brew which are readily available in any home. 
The First method that we will be using is the cold press method. We will need the following equipment in order to brew.

  • Coffee
  • Grinder
  • French Press
  • Coffee Filter
  • Decanter (mason jar or other air tight container)
  • Hot Water
  • Cold Water
  • Scale
  1. Our first step is to measure out the coffee. We prefer to use a ratio of 8 parts water to 1 part coffee. We will be using 90g of coffee to 720ml of water. 

  2. We will use a grind similar to that of a french press. About a 28 on a Baratza encore or med-course on other grinders.

  3. We will then place the coffee in the french press and cover it with 150g of water that is ~205 degrees Fahrenheit. This will allow the coffee to bloom as well as bring out some of the brighter notes in the cold brew. Wait for 30 seconds.

  4. After we wait, place the remaining water in the french press and place the filter and lid on. Push down the filter just enough to submerge the grinds.

  5. Place in refrigerator for 18 hours.

  6. Remove from refrigerator and plunge the filter to the bottom.

  7. Place pre-wet filter in coffee brewer and pour coffee over filter. When the coffee stops flowing, remove the filter and place a new one. This will happen 1-2 times.

  8. Once filtered. The coffee can sit in a sealed container for up to 2 weeks.

  9. For best enjoyment, pour over ice and drink up on a hot Southern California Day.

Good luck! We find that it brings out some of the brighter notes in cold brew.
